Project Summary:

Contracted to evaluate and revitalize all of the Food & Beverage operations.

Streamlined operations to decrease food and labor costs, and improve staff productivity. This included revamping all menus, wine program, front and back of house staff training to improve efficiency and food quality, revising schedules and introducing structured policies and procedures.

Conceptualized and successfully opened a cocktail lounge, coffee bar and full barista training program and a market to table beach dining concept to improve sales with minimal investment.

Responsible for the hiring and grooming of a new F&B management team suitable to ensure a smooth and seamless handover and execution of new vision and improvements after the completion of the contract.

Ongoing contract with this property exists to ensure the Food & Beverage team maintains the vision and direction with close mentorship and support on an ongoing basis.
